Yogi’s Curried Vegetables

MAKES 2 SERVINGS

A naturally sweet and creamy coconut sauce poured over cauliflower, broccoli, and zucchini. Matt invented this recipe to satisfy requests for a dish containing no garlic or onion, both of which are considered by some yogis to be too stimulating for the meditative mind. I wonder if they were referring to the breath of the garlic-eater sitting next to them while they tried to meditate!

FOR THE VEGETABLE MIX

2 cups chopped cauliflower

11/2 cups chopped broccoli

11/2 cups cubed peeled zucchini

1 teaspoon sea salt

FOR THE DRESSING

11/3 cups coconut butter

2/3 cup coconut water

1/3 cup fresh lemon juice

2 tablespoons stone-ground mustard

1-inch piece peeled fresh ginger

1 tablespoon garam masala

1 teaspoon ground turmeric

1 teaspoon ground coriander

Pinch of cayenne

To prepare the vegetable mix, in a mixing bowl, combine the chopped vegetables and rub them thoroughly with the sea salt. Allow them to sit while making the dressing.

To make the dressing, in a high speed blender, combine all of the ingredients and blend until smooth.

Combine the vegetables and the dressing and mix until the veggies are well coated. Serve immediately.
